Handbook of Polysaccharides

Acumentia member Dr Chris Lawson has written a new e-book entitled Handbook of Polysaccharides. The handbook/toolbox is primarily for people who are not polysaccharide specialists but who use them in the course of their work.  In the food industry polysaccharides are used extensively as ingredients and to confer texture to foods, while in the pharmaceutical industry they are used as setting agents, rheological modifiers, adjuvants and in some cases as drugs (e.g. Heparin).  Sources, applications, analysis and properties are covered together with a review of all the commercially available products on the market.  Finally, there is a reference section for further reading.
